Potato Soup

Last Saturday our church hosted a meeting to discuss our camp program with other churches. They needed soup or chili and cornbread to feed all those who attended so I volunteered to bring a crockpot of potato soup. There were less people in attendance then they expected so all the soups were brought out again for our Wednesday night dinner, but they needed another crockpot of my soup since it got pretty low. It was all gone easily by the end of the evening.

Here's the super simple recipe that was given to me by my sister-in-law Nikki:

1 bag frozen Potato's O'Brien
1 lb. diced ham
1 can cream of celery soup
1 can cream of mushroom soup
1 can chedder cheese soup
1 can chicken broth
2 cans milk
1 can water (use the empty milk can)
1/2 stick butter cut into chunks

Dump all of this into a crockpot and cook on low for about 6 hours. Or high for about 4 hours.

You can also use bacon or cut up sausage in place of the ham, but I think ham is best. Try this next time you need a church potluck meal or have several hungry teenagers that need to be fed.

I don't make any promises as to the calorie or fat content, but I can testify that it is very good.

Sounds delicious so I will try the soup recipe, except, I'll have to substitute cream of chicken for the mushroom soup. My husband hates cream of mushroom soup...it goes back to a bad experience in childhood, heee, heee! Thanks for sharing the recipe.

I like it too. I used to make it for work and bring it in on a cold day. It was always a hit.
