Adrian showing me what size pot his father uses when making this soup. He starts by stacking the meat in the bottom of the big pot. He uses oxtails and beef stewmeat. Then he starts loading the vegetables, sprinkling each layer with tomato and chicken bouillon.
He packs the vegetables in tight since they will shrink while cooking. When he has all the vegetables packed in, he pours V-8 juice and water over the top.
The list of ingredients can vary, but for this soup he used:
Beef stew meat, Oxtails (with bones), corn on the cob, cabbage, green, red, orange and yellow peppers, zucchini squash, yellow onions, celery, carrots, baby potatoes, plum tomatoes, chicken bouillon, tomato bouillon, V-8 juice and water. He brings it to a boil and then lets it simmer all night long.
By morning the meat is cooked and very tender and all the vegetables have cooked through. After stirring, he serves it with bread and butter. You have to pick bones out and eat the corn off the cob right out of the soup. It's a very rustic, filling and delicious dinner. And it makes plenty to feed your family for several days!
